Gluten Free Shrimp Scampi

My grand-daughter and I both love scampi. Seafood is the only meat she eats, so as you can imagine this is a treat for me to share with her.

We like it over grits or rice, but could use gluten-free pasta.

1/4 cup butter

1/4 cup coconut oil

4 cloves minced garlic

1 cup finely chopped onion

Juice of 2 lemons

1 teaspoon cayenne pepper

1/2 teaspoon black pepper

3/4 teaspoon sea salt

1/2 cup chopped parsley

1/2 cup white wine

about 3 pounds peeled deveined shrimp

Combine butter, coconut oil, wine, garlic, and onions in skillet. Low heat let simmer and cook down till onions are translucent. add remaining ingredients except shrimp.

At this point can freeze separate to be added to shrimp later or can add shrimp cook then freeze. If you cook shrimp then freeze make sure you cool shrimp quickly over a cold ice bath before freezing.

I’m lazy though, I mix it all, separate it into freezer bags add the amount of shrimp I want and freeze. Then through it into a skillet frozen when I want to eat and it takes about 5 minutes to thaw and cook over high heat. I cook minute rice in the microwave while it’s cooking and WHALA dinner is served.  I know gourmet I am not, but we LOVE it.
